In celebration of our loose connections and the wonderful benefits they bring to our lives, we’re interviewing some of the very important people that you might meet if you work, live or visit Stratford.

The Stratford branch of Tonkotsu, a chain of Modern Japanese ramen bars in the heart of London, Brighton & Birmingham, is among the most exceptional eateries in the area due to the team’s hardworking spirit. We talk to Jess about the food, her colleagues and her favourite Stratford spots. On the menu are homemade noodles and broths alongside a selection of gyoza, sides, sake, cocktails and craft beer.

Family, delicious, slurpy, unique, fast.

 

And what's your favourite item on the menu?

 Prawn gyozas.

 

What’s something you can talk endlessly about?

Anything and everything, I talk non-stop.

 

What would you say makes your team exceptional?

The team are exceptional because they are hardworking, no matter what’s thrown at them.

 

Who makes you laugh the most?

Silviu, a chef here at Tonkotsu.
